Slowcooked pork loin in beer

1 pork loin

1 bottle of beer

1 thinly sliced onion

1 crushed garlic clove

1/4 cup evaporated milk

1 tsp mustard

Salt and pepper to taste

Season with salt and pepper and sear pork loin on all sides. Place in slow cooker. Sauteé onions in remaining fat until soft. Add crushed garlic and mix in for 1 minute. Add 1/3 of beer to deglaze. Add the rest of the beer and let it reduce for a few minutes. Pour over pork and cover. Set slow cooker to high for first hour and then to low for 6 hours. Place pork on a platter. Put sauce in a pan over medium heat to reduce to half. Add evaporated milk and a teaspoon of mustard. Mix well and pour over pork.
